A week ago we infused Elmer T. Lee single barrel bourbon with pear slices and cinnamon sticks and in a week we were able to taste our results. The aroma was a sweet (less spicy) cinnamon with vanilla and clover. The ingredients we used for the infusion added some sugar and sweetness to the flavor. Upon first taste we were met with an enhanced honey flavor and more importantly a smooth finish. We didn’t measure how the alcohol content changed, but it reminded us of a cinnamon and honey hard candy. Next time, we might not waste Elmer T. Lee bourbon and go for something less expensive, but we were really happy with the results. Give it a try!
