We have a surplus of vodka and we gave homemade lemoncello a try. It’s easy to have a subjective view on the end product, but to be honest, our lemoncello exceeded our expecatations! Here’s our recipe:
- 10 organic lemons
- 1 bottle 90 proof vodka
- 3 1/2 cups of water
- 2 1/2 cups of sugar
Peel only the lemon zest and soak in vodka for 5-7 days. Once it’s finished soaking for a week, boil water and dissolve the sugar. Cool the sugar-water to room temperature and add to vodka and lemons, and soak overnight. Fine strain the mixture in cheesecloth and your lemoncello is done.
